Denver entrepreneur and nightlife guru Francois Safieddine has a propensity for launching venues with a big buzz, and the latest venture from Lotus Concepts is no exception. Chlóe, formerly Ruth’s Chris Steak House at 1445 Market St., Denver, will officially open at the end of this week.
Reverb was invited in for a sneak peak at the new venue, and we spoke with Safieddine about his latest project:
What is the concept behind Chlóe?
As my team and I were thinking of the concept for Chlóe, we started referencing favorite things we have seen over the years from different cities, different cuisines and cocktails and came up with the idea: what if a person existed that had all of these collective experiences and she moved to Denver and opened a venue? From there we researched what the downtown crowd was looking for that was not being done — there was a demographic that wanted a true lounge concept, not just a bar or club but a social meeting place with a design created to enhance the lounge experience.
Who is Chlóe?
We wanted Chlóe to encompass a chic international “fashionista” that wanted to open a lounge restaurant, garden discotheque that had all the experiences that are comprised of in the venue. We used a local model, Stephanie Maxwell, for the entire campaign as well as the artwork and visuals in the venue.
So how is this venue different than others that have come and gone in Denver?
Chlóe is not primarily a club. What really sets Chlóe apart is the Mezze lounge that features Mediterranean style dining and small plates from Chef Jose Guerrero and signature cocktails invented by head mixologist Eryn Latterman. The outside patio and courtyard is the first of its kind with a high-top fire pit communal table and cabana style U-shaped couch seating.
Who is the Chlóe clientele?
Colorado residents who either live or work downtown and are selective about their lounge experience —who want both a great place to eat and drink a signature cocktail, but desire the chic and modern lounge ambiance to match.
Following a week of private events, Thursday, July 21 will be mark the first night of the grand opening weekend of Chlóe. Friday, July 22 will be the first day the full food and drink menu is available to the public.
